Brown Butter S’mores Cookies

We’re in the last days of Summer, lazy days are becoming far and few in between. Back to school shopping is upon us and all I want to do is hold on to Summer a bit longer.

Like every season they must come to an end, but there’s certainly a way to enjoy Summer a little longer. And that’s with these insanely scrumptious Brown Butter S’more’s Cookies!

These remind me of a camp fire that I’ve never been to, but always wanted to have. When I think of S’mores, melty marshmallows covered in chocolate, sandwich between graham crackers seems to fit the imagination. Well, here is where imagination meets indulgent creativity and you’re gonna love this recipe.Cookies

Browned butter plays a major role in depth of taste in this cookie. It transcends a warm, subtle, and smooth nutty flavor that only brown butter can do. It certainly compliments the vanilla notes well.

Semi-sweet chocolate chips allows the cookie to have a perfect balance of sweetness without being too much. And of coarse dark chocolate has to bring about much needed balance, because there’s more that’s going into this cookie.

Just like a S’mores, we’re  throwing in graham crackers and marshmallows. It wouldn’t be complete without it. And for extra finesse, which is optional, but I recommended it highly. Is adding mini milk chocolate caramel squares. Whew! Honey decadence is here for you!

I added the mini squares after they baked by cutting them into small pieces and studding them on top of the hot cookie. What you get is a beautiful finished look to your cookies. And a swell trick I learned is when you take your cookies out the oven, drop the cookie pan onto the table about two times.

Doing this will give your cookies a magazine quality look. After all I love making food pretty and I want you to do so too.

So, let’s get into this recipe why don’t we?

Tools you will need are;

  • Large mixing bowl
  • hand held mixer, or standing mixer
  • small whisk or spoon
  • wooden spoon
  • cookie sheet
  • parchment paper or silpat

List of ingredients are;

  • Butter
  • Flour
  • Kosher salt
  • Baking SODA
  • Brown sugar
  • White sugar
  • Eggs
  • Vanilla
  • Semi-Chocolate chips
  • Dark Chocolate baking squares (I used Ghiradelli)
  • Marshmallows
  • Graham crackers
  • Mini milk chocolate squares for garnish *optional

Gimmie S’mores Brown Butter Cookies

Print Recipe
Serves: 2 dozen Cooking Time: 9 minutes

Ingredients

  • 2-1/4 cup of flour
  • 1 teaspoon of Kosher salt
  • 1 teaspoon of baking soda
  • 2 sticks of butter
  • 3/4 cup of white sugar
  • 3/4 cup of brown sugar
  • 2 eggs
  • 1-1/2 teaspoon of vanilla
  • 2 cups of semi-sweet chocolate chips
  • 4 squares of dark chocolate, baking chocolate chopped into small chunks
  • 1 cup of marshmallows plus 1 tablespoon
  • 3 whole graham crackers (which is about 12 small squares) cut into chunks
  • Ghiradelli mini-caramel Chocolate squares *optional

Instructions

Combine flour, salt and baking soda into a large bowl.

On the stove on medium high heat, add butter and let butter brown. This step should take about 10-15 minutes.

Butter is browned when it becomes a dark caramel color.

Remove butter from heat, place into a bowl and let it set in the freezer for about 20-25 minutes.

Once butter is at a semi-soft stage and no longer liquid.

In a separate bowl add sugars and browned butter, and cream together until light and fluffy.

Add the eggs into the sugar and butter mixture and mix.

Then add in vanilla mix well.

Now add flour mixture into the sugar mixture with a wooden spoon.

stir just until all the flour is moist and combined.

Add the semi-sweet chocolate chips, marshmallows, graham crackers and combine.

Once combined, cover cookie dough with Saran Wrap and refrigerate the dough for and 30 minutes to an hour.

Bake on 375 degrees for 9 minutes.

Once done, take cookies out and let them cook a bit more on the pan, for about 3 minutes.

While cookies are hot add a few pieces of the dark chocolate and marshmallows for extra cuteness.

And for double cuteness add mini caramel squares for a pretty-delicious presentation.
