Bonita’s Pomegranate BBQ Chicken Wings

On those Friday nights when you just want something super easy to make, and oh so satisfying, these pomegranate BBQ chicken wings are a go-to. It’ll take 60 minutes to get these together and on your plate! And the best part, is that the oven does most the work for you. Can you say score!

I used a pomegranate concentrate that I picked up at my local grocery store but, already made pomegranate juice such as POM will totally work.

The spice blend for the chicken wings were simple;

  • Turmeric
  • Paprika
  • Onion Powder
  • Chili Powder
  • Cumin

These spices are a must to keep in your kitchen pantry.

Oven baked on 425 degrees does all the work for you, major cool points. As the chicken wings are browning in the oven, this is the time to put that delicious pomegranate BBQ sauce together. Cooking for a crowd? Prepare this pomegranate BBQ sauce ahead of time.

Bonita's Pomegranate BBQ Chicken Wings

Serves: 5 Cooking Time: 60 minutes

Ingredients

  • FOR THE SAUCE
  • 1/4 cup of ketchup
  • 1 Tablespoon of yellow mustard
  • 1 1/2 Tablespoon of honey
  • 1 Tablespoon of molasses
  • 1 cup of POM juice *see notes
  • 1/4 cup of pomegranate seeds, plus more for garnish
  • 1 teaspoon of paprika
  • 1/8 teaspoon of cayenne pepper
  • 1/4 teaspoon of red pepper flakes
  • 6 mint leaves torn into pieces (more for garnish)
  • 1 Tablespoon of cornstarch
  • 2 Tablespoon of water
  • FOR CHICKEN WINGS
  • Parchment paper for lining baking sheet
  • 1 family sized package of chicken wings
  • 1 1/2 teaspoon of salt
  • 1 teaspoon of cracked black pepper
  • 3 Tablespoons of oil, such as grapeseed, or any veg oil
  • 1 tablespoon of paprika (sweet paprika is preferred)
  • 1 teaspoon of onion powder
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of turmeric
  • 1 Tablespoon of baking powder

Instructions

FOR THE WINGS

Preheat oven 425 degrees

Pat your wings from excess liquids to dry,

Separate the wings from the drumette with a sharp knife, and place separated chicken into a large bowl

Season chicken with the salt and pepper by sprinkling and combing

Mix The 3 Tablespoons of oil, with the 5 spices, and mix together in a small bowl until combined

Add the spice and oil mixture to the chicken wings/drummettes, and mix coating every piece well

Place chicken onto a baking sheet lined with parchment paper

Sprinkle the baking powder on both sides of the chicken

Bake for 30 minutes on 425 degrees turning the chicken over at 30 minutes and bake for 25 minutes more to render a crispy, tender chicken wing

FOR THE SAUCE

While the chicken is baking start your sauce

In a saucepan over medium heat add First 10 ingredients for the sauce, into the saucepan

Let it come to a simmer

Mix the cornstarch and 2 tablespoons of water in a small bowl together until cornstarch has dissolved

Slowly add the cornstarch mixture into the sauce pan whisking to combine

Turn down heat to low and allow sauce to cook for about 25 minutes, stirring occasionally as it cooks

If the sauce is too thick, add 1 tablespoon of POM juice to get the right consistency

After the chicken has cooked about 55 minutes take out the oven, and place chicken into a large bowl

Coat the chicken with the Pomegranate BBQ sauce, reserve some sauce for extra dipping. Garnish with pomegranate seeds and fresh mint.

Serve hot,and eat immediately

Notes

* If using pomegranate concentrate, mix 4 Tablespoons of pomegranate concentrate to 1 cup of water to make pomegranate juice. Totally optional, as the POM juice works fine.

  • Bonita🍎Crumb. It’s apple season and there are so many apple orchards here in the the Big Apple you just gotta go further North to reach them. .

Today we visited Masker Orchards in Warwick NY, there’s 14 different varieties of apples grown here. And the Red Delicious were the sweetest I’ve ever tasted. The farms are such a great escape from the concrete jungle, and many New Yorker’s find there way further North to break away from the norm. I love NY for this season alone🍎🍏
  • Beans, rice, chicken and plantains always make a complete meal. Now add a salad on the side to balance things out all I had was a lime, but it worked out well. I’ve been on a roll with cooking beans as of late and the family has been loving it.
